Chocolate Pudding
- 2 cups milk

Crust
- 1 1/2 cups crushed graham crackers
- 2 tbsp butter, melted
Topping
- 2 cups marshmallows
- Additional crushed graham crackers for topping (optional)
Instructions
- Make the chocolate pudding: In a saucepan, whisk together the milk, sugar, cocoa powder, cornstarch, and salt. Bring the mixture to a boil over medium heat while stirring regularly to avoid lumps. In a separate bowl, whisk the eggs and then gradually whisk in some of the hot milk mixture to temper the eggs. Pour the egg mixture back into the saucepan and continue cooking until the pudding thickens, about 1-2 minutes. Remove from heat and stir in the vanilla extract.
- Prepare the crust: Combine the crushed graham crackers with the melted butter until well mixed. Press the mixture firmly into the bottom of individual serving cups to form a crust layer.
- Assemble and chill: Pour the warm chocolate pudding over the graham cracker crust in each cup. Optionally sprinkle some crushed graham crackers on top, then add marshmallows. Chill the cups in the refrigerator for at least 2 hours to set and cool completely.
- Toast marshmallows: Just before serving, place the pudding cups under the broiler. Toast the marshmallows until they turn golden brown and slightly melted, watching closely to prevent burning. Serve immediately.

- Tempering the eggs prevents them from scrambling when added to the hot mixture.
- Use full-fat milk for a creamier pudding.
- Watch the marshmallows closely while broiling as they brown very quickly.
- To make individual servings easier to toast, consider transferring marshmallows to a baking sheet and then topping each pudding cup after broiling if preferred.
