Ingredients

Scale

For the Chicken

  • 4 pieces Chicken Thighs (skin-on for crispy texture)
  • 3 cloves Garlic (minced for maximum flavor infusion)

For the Sauce

  • 2 tablespoons Plain Flour (can use cornstarch as gluten-free substitute)
  • 3 tablespoons Wholegrain Mustard (Dijon mustard can be used)
  • 4 tablespoons Honey (maple syrup for vegan alternative)
  • 200 ml Chicken Stock (low-sodium for healthier choice)
  • 100 ml Organic Sweet Chilli Sauce (adjust based on heat preference)

For Serving

  • 200 grams Green Beans (broccoli or asparagus are good substitutes)
  • 2 cups Steamed Rice (quinoa is a healthy alternative)

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (180°C fan-forced) to prepare it for the baking process, ensuring the chicken will get crispy and cooked evenly.
  2. Brown Chicken: In an ovenproof pan, heat oil over medium-high heat. Cook the chicken thighs in batches for about 4 minutes on each side until they are golden brown and aromatic, which locks in the juices and enhances flavor.
  3. Sauté Garlic: Add the minced garlic to the pan and sauté for approximately 30 seconds until it’s fragrant but not browned, which adds depth to the dish.
  4. Prepare Sauce: Sprinkle the plain flour over the contents and stir well to incorporate. Whisk in honey, wholegrain mustard, chicken stock, and organic sweet chili sauce, then bring the mixture to a gentle simmer to thicken and combine the flavors.
  5. Combine Chicken & Sauce: Return the browned chicken thighs into the pan, coating each piece thoroughly with the luscious sauce, which will help develop a sticky, flavorful coating during baking.
  6. Bake: Transfer the pan to the preheated oven and bake for 30 to 35 minutes, until the chicken is fully cooked through, tender, and finished with a beautiful glaze.
  7. Serve: Plate the honey mustard chilli chicken alongside steamed rice and vibrant green beans, optionally garnished with fresh herbs like parsley or cilantro to add a fresh, colorful touch.

Notes

  • Garnish with fresh herbs such as parsley or cilantro for extra color and flavor.
  • To store leftovers, keep in an airtight container in the refrigerator for up to 3 days.
  • For freezing, cool completely then transfer to a freezer-safe container; freeze up to 3 months.
  • Reheat by thawing overnight in the fridge and warming in the oven at 180°C (350°F) for 20 minutes or microwave until heated through.
  • Adjust spice level by adding more or less sweet chili sauce according to your preference.
  • For gluten-free version, use cornstarch instead of flour and ensure mustard is gluten-free.
  • For a vegan alternative, substitute honey with maple syrup and replace chicken thighs with marinated tofu or tempeh.
