Description

Enjoy a delightful twist on classic strawberry shortcake with this Strawberry Shortcake Custard Toast Stack. Layers of golden brioche toast soaked in a rich custard cream, topped with fresh strawberries, create a luscious, comforting dessert or breakfast treat.

Ingredients

Scale

Toast

  • 4 slices brioche bread
  • 2 eggs
  • 0.5 cup milk
  • 2 tbsp sugar

Custard Cream

  • 1 cup milk
  • 2 tbsp sugar
  • 1 tbsp cornstarch
  • 1 egg yolk

Topping

  • 1.5 cups fresh strawberries, sliced

Instructions

  1. Prepare custard soak: In a mixing bowl, whisk together 2 eggs, 0.5 cup milk, and 2 tbsp sugar until fully combined. This mixture will be used to soak the brioche bread slices.
  2. Soak bread: Dip each slice of brioche bread into the custard soak, allowing it to absorb some liquid but not become soggy. Set aside for a few minutes.
  3. Cook toast: Heat a baking sheet in the oven at 350°F (175°C), then place soaked bread slices on it. Bake for about 8-10 minutes or until golden and slightly crisp on the edges. Remove and cool on a wire rack.
  4. Prepare custard cream: In a saucepan over medium heat, whisk together 1 cup milk, 2 tbsp sugar, and 1 tbsp cornstarch until smooth. Gradually bring to a simmer, stirring constantly until thickened. Remove from heat, then whisk in 1 egg yolk quickly to enrich the custard without scrambling.
  5. Assemble the stack: Begin with a slice of toast, spread a generous layer of custard cream over it, add a layer of sliced strawberries, and repeat layering with remaining slices, custard, and strawberries, finishing with strawberries on top.
  6. Serve warm: Serve immediately while the toast is warm and custard is fresh for the best texture and flavor.

Notes

  • Best served fresh to maintain the softness of the custard-soaked toast.
  • You can lightly toast the brioche before soaking to add extra texture.
  • For added flavor, sprinkle a little powdered sugar or drizzle honey on top.
  • Use fresh ripe strawberries to enhance sweetness and freshness.
  • Store leftovers covered in the refrigerator and consume within 1 day to prevent sogginess.
