Instructions
- Prepare custard soak: In a mixing bowl, whisk together 2 eggs, 0.5 cup milk, and 2 tbsp sugar until fully combined. This mixture will be used to soak the brioche bread slices.
- Soak bread: Dip each slice of brioche bread into the custard soak, allowing it to absorb some liquid but not become soggy. Set aside for a few minutes.
- Cook toast: Heat a baking sheet in the oven at 350°F (175°C), then place soaked bread slices on it. Bake for about 8-10 minutes or until golden and slightly crisp on the edges. Remove and cool on a wire rack.
- Prepare custard cream: In a saucepan over medium heat, whisk together 1 cup milk, 2 tbsp sugar, and 1 tbsp cornstarch until smooth. Gradually bring to a simmer, stirring constantly until thickened. Remove from heat, then whisk in 1 egg yolk quickly to enrich the custard without scrambling.
- Assemble the stack: Begin with a slice of toast, spread a generous layer of custard cream over it, add a layer of sliced strawberries, and repeat layering with remaining slices, custard, and strawberries, finishing with strawberries on top.
- Serve warm: Serve immediately while the toast is warm and custard is fresh for the best texture and flavor.
