Ingredients
Scale
Bread and Filling
- 8 slices bread (white, whole wheat, or brioche)
- 1/2 cup peanut butter (creamy or crunchy)
- 2 ripe bananas
Egg Mixture
- 4 large eggs
- 1 cup milk (any kind)
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
For Cooking and Serving
- 2 tablespoons butter (for cooking)
- Maple syrup (to taste, for serving)
Instructions
- Prepare Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, ground cinnamon, and vanilla extract until well combined and smooth.
- Heat Skillet: Preheat a skillet or griddle over medium heat and add 1 tablespoon of butter to melt evenly coating the surface.
- Assemble Sandwiches: Spread 2 tablespoons of peanut butter on one side of each bread slice. Peel and slice the bananas thinly. Place a slice of bread peanut butter side up on a plate, layer the banana slices evenly on top, then cover with another slice of bread peanut butter side down to form a sandwich. Repeat for remaining bread slices.
- Dip Sandwiches: Dip each peanut butter banana sandwich into the egg mixture, fully soaking each side for a few seconds to absorb the liquid.
- Cook French Toast: Add more butter to the skillet if needed, and carefully place the soaked sandwiches on the hot skillet. Cook for 3 to 4 minutes on each side until the bread turns golden brown and slightly crisp.
- Keep Warm: Remove the cooked sandwiches and keep them warm on a plate while cooking the rest.
- Serve: Slice each sandwich in half, drizzle with maple syrup to taste, and serve warm for a delicious breakfast treat.
Notes
- Use brioche or thick-cut bread for a richer texture and flavor.
- Adjust the cinnamon to your preference for more or less spice.
- Substitute almond or oat milk to make it dairy-free if desired.
- For extra crispiness, cook on medium-low heat and allow more browning time.
- Maple syrup can be replaced with honey or agave nectar if preferred.
- Leftovers can be refrigerated and reheated in a toaster or skillet.
