Perfect as a refreshing, protein-packed snack or dessert, they are quick to prepare and freeze into bite-sized frozen delights.
Ingredients
Main Ingredients
- 2 cups Plain Greek yogurt (full-fat or 2% for best texture)
- 1 cup Natural peanut butter (oil-separated, stirred smooth)
- 2–3 tbsp Honey or maple syrup (adjust sweetness to taste)
- 0.5 tsp Vanilla extract (pure for best flavor)
- 1 pinch Sea salt (enhances flavor and balances sweetness)
Optional Ingredients
- 2–3 tbsp Mini chocolate chips (if using)
- Melted dark chocolate (for dipping or drizzling)
- 1 tsp Coconut oil (for smoother melted chocolate)
Instructions
- Prepare the mixture: In a medium bowl, whisk together the Greek yogurt, natural peanut butter, honey or maple syrup, vanilla extract, and a pinch of sea salt for 30–60 seconds until the mixture becomes glossy and smooth.
- Add chocolate chips (optional): Gently fold in mini chocolate chips if you choose to include them, ensuring they are evenly distributed without overmixing.
- Spoon into molds: Using a small cookie scoop or spoon, portion the mixture into silicone molds or a parchment-lined mini muffin tray. This will help form uniform bite-sized pieces.
- Initial freeze: Place the molds in the freezer uncovered for 30 minutes to begin setting the bites.
- Freeze until firm: Cover the molds and continue freezing for an additional 2–3 hours until the bites are completely firm and frozen through.
- Melt chocolate (if using): In a small bowl, gently melt dark chocolate with coconut oil until smooth. Dip or drizzle the frozen bites with the melted chocolate for added richness.
- Set the chocolate: Return the chocolate-coated bites to the freezer for 10–15 minutes so the chocolate hardens properly.
- Store: Keep the frozen bites in an airtight container separated by parchment paper to prevent sticking. Store in the freezer for up to 2–3 weeks for maximum freshness.
Notes
- You can adjust the sweetness by increasing or decreasing the honey or maple syrup depending on your taste preference.
- Use full-fat or 2% Greek yogurt for creamier texture; non-fat yogurt may result in icy bites.
- Silicone molds make it easier to remove the bites, but parchment-lined trays also work well.
- If you prefer nut-free, substitute peanut butter with almond butter or sunflower seed butter.
- For a vegan version, use plant-based yogurt and a suitable vegan sweetener.
