Ingredients
Scale
Main Ingredients
- 2 cups Plain Greek yogurt (Use full-fat or 2% for best texture)
- 1 cup Natural peanut butter (Oil-separated, stirred smooth)
- 2–3 tbsp Honey or maple syrup (Adjust sweetness to taste)
- 0.5 tsp Vanilla extract (Use pure for best flavor)
- 1 pinch Sea salt (Enhances flavor and balances sweetness)
Optional Ingredients
- 2–3 tbsp Mini chocolate chips (if using)
- Melted dark chocolate (For dipping or drizzling)
- 1 tsp Coconut oil (For smoother melted chocolate)
Instructions
- Mix the base: Whisk together the Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, and sea salt in a bowl for 30–60 seconds until the mixture is smooth and glossy.
- Add chocolate chips: Gently fold in mini chocolate chips if using, taking care not to overmix.
- Portion the mixture: Spoon the prepared mixture into silicone molds or a parchment-lined mini muffin tray using a small cookie scoop to ensure uniform size.
- Freeze the bites: Place the molds in the freezer uncovered for 30 minutes to start setting, then cover and continue freezing until firm, approximately 2 to 3 hours.
- Optional chocolate coating: Melt dark chocolate with coconut oil until smooth, then dip or drizzle the frozen bites with this chocolate. Return to the freezer for 10–15 minutes to allow the chocolate to set firmly.
- Storage: Transfer frozen bites to an airtight container with parchment paper layered between them to prevent sticking. Store in the freezer for up to 2 to 3 weeks.
Notes
- Use full-fat or 2% Greek yogurt for best texture and creaminess.
- Adjust the sweetness by varying the amount of honey or maple syrup to suit your taste preferences.
- If you prefer, omit the chocolate chips or melted chocolate for a simpler snack.
- Silicone molds make removing the frozen bites easier but a parchment-lined mini muffin tray works as a good alternative.
- This recipe is easily customizable with other nut butters like almond or cashew.
- Allow bites to thaw for a few minutes before eating if they are too hard straight from the freezer.
