Instructions

  1. Make the chocolate pudding: In a medium saucepan, whisk together the milk, sugar, cocoa powder, cornstarch, and salt until smooth. Heat over medium heat, stirring constantly until the mixture begins to boil. Meanwhile, whisk the eggs in a separate bowl. Slowly pour a small amount of the hot milk mixture into the eggs to temper them, whisking constantly. Then return the egg mixture to the saucepan and cook for a few more minutes, stirring continuously until the pudding thickens. Remove from heat and stir in the vanilla extract.
  2. Prepare the crust: Combine the crushed graham crackers with melted butter in a bowl. Mix until the crumbs are evenly coated. Press this mixture firmly into the bottom of your serving cups to form an even crust layer.
  3. Assemble and chill: Pour the warm chocolate pudding over the graham cracker crust in each cup. Sprinkle a layer of additional crushed graham crackers and then top with marshmallows. Place cups in the refrigerator and chill for at least 2 hours to set.
