Sauce
- 10.5 oz cream of chicken soup
- 1 ½ cups milk
- 1 cup sour cream (at room temperature)
- ½ teaspoon onion powder
- 1 oz packet Ranch seasoning mix
Instructions
- Slice and Tenderize the Chicken: Slice each chicken breast into 2-3 thinner pieces aiming for about ½ inch thickness. Use a meat tenderizer as needed to ensure even thickness and help the chicken stay plump after cooking.
- Season the Chicken: Pat the chicken slices dry with paper towels. Sprinkle Italian seasoning, salt, and pepper evenly on both sides. Brush one side of each piece with the melted butter, making sure the butter is not too hot so it doesn’t cook the chicken prematurely.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Working in batches, sear the chicken slices for 4-5 minutes per side, until a golden brown crust develops. Remove the chicken from the pan and set aside.
- Prepare the Sauce: In the same skillet, add the cream of chicken soup, milk, sour cream, onion powder, and Ranch seasoning mix. Stir to combine, scraping up any browned bits from the bottom of the pan. Allow the sauce to bubble gently and reduce slightly over about 5 minutes.
- Combine Chicken and Sauce: Return the seared chicken to the skillet, nestling it into the sauce. Spoon some sauce over the chicken pieces to coat them well.
- Simmer and Heat Through: Partially cover the skillet with a lid and let the chicken simmer gently in the sauce for approximately 10 minutes, allowing the flavors to meld and the chicken to heat through fully.
- Serve: Optionally, serve the creamy ranch chicken with baked potatoes, spooning extra sauce over the potatoes to enjoy the full flavor.
