  • 1 ½ cups milk
  • 1 cup sour cream, at room temperature
  • ½ teaspoon onion powder
  • 1 oz. packet Ranch seasoning mix

Instructions

  1. Prepare Chicken Slices: Slice each chicken breast into 2-3 thinner pieces about ½ inch thick. Use a meat tenderizer to pound the slices if necessary to ensure even thickness and to help them plump up when cooked.
  2. Season the Chicken: Pat the chicken slices completely dry with paper towels. Sprinkle both sides with Italian seasoning, salt, and pepper. Brush one side of each piece with the melted butter, taking care that the butter isn’t too hot to avoid cooking the chicken prematurely.
  3. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken slices in batches for about 4-5 minutes per side, or until each piece develops a golden brown crust. Remove chicken from skillet and set aside.
  4. Make the Ranch Sauce: In the same skillet, reduce heat to medium and add the cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning mix. Stir well to combine and bring the sauce to a gentle simmer. Allow to bubble gently and reduce slightly for about 5 minutes.
  5. Simmer Chicken in Sauce: Return the seared chicken slices to the skillet, nestling them into the sauce. Spoon sauce over the chicken and partially cover the skillet. Let the chicken cook through and absorb the flavors from the sauce for about 10 minutes, ensuring the meat is cooked thoroughly and the sauce thickens slightly.
