Instructions

  1. Prepare the Chicken: Slice each chicken breast into 2-3 thinner pieces, aiming for about ½ inch thickness. Use a meat tenderizer to even out the slices if needed to ensure uniform cooking and a plumper texture.
  2. Season the Chicken: Pat the chicken slices dry with paper towels. Season both sides of each piece with Italian seasoning, salt, and pepper. Then brush one side of each chicken slice with melted butter, ensuring the butter is warm but not hot to avoid cooking the chicken prematurely.
  3. Sear the Chicken: Heat 1 to 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the chicken slices in batches, cooking each side for 4-5 minutes or until a golden brown crust forms. Once seared, remove the chicken from the skillet and set aside.
  4. Prepare the Sauce: In the same skillet, add the cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning mix. Stir thoroughly to combine well. Allow the sauce to gently bubble and reduce over medium heat for about 5 minutes, stirring occasionally.
  5. Simmer Chicken in Sauce: Return the seared chicken slices to the skillet, nestling them into the sauce. Spoon some sauce over the top of the chicken pieces.
