Ingredients
Scale
Chicken and Vegetables
- 2 pieces chicken breasts (boneless, skinless)
- 2 cups broccoli (fresh or frozen)
Cheesy Sauce
- 1 can cream of chicken soup (10.5 oz)
- 1 cup sour cream
- 1/2 cup milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp pepper
- 2 cups cheddar cheese (shredded, divided)
Instructions
- Prepare the crockpot: Grease the inside of a crockpot to prevent sticking, then place the boneless, skinless chicken breasts at the bottom in a single layer.
- Make the creamy sauce: In a medium mixing bowl, whisk together the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper until the mixture is smooth and creamy.
- Combine chicken and sauce: Pour the creamy mixture evenly over the chicken breasts, making sure each piece is well-coated with the sauce.
- Cook the chicken: Cover the crockpot and cook on low for 4 to 5 hours or on high for 2 to 3 hours, checking that the chicken becomes tender and fully cooked through.
- Shred and add broccoli: Using two forks, shred the cooked chicken inside the crockpot. Stir in the broccoli florets and 1 cup of the shredded cheddar cheese. Continue cooking on low for another 20 to 30 minutes to allow the broccoli to soften and the cheese to melt into the mixture.
- Finish with cheese topping: Sprinkle the remaining 1 cup of cheddar cheese over the top of the dish. Cover again and let the cheese melt completely for a few minutes before serving.
- Serve: Serve the cheesy chicken and broccoli hot, ideally over cooked rice for a complete meal.
Notes
- You can use fresh or frozen broccoli according to your preference or availability.
- For a lighter version, use low-fat sour cream and reduced-fat cheddar cheese.
- If you want a thicker sauce, reduce the milk slightly or cook uncovered in the last 30 minutes to evaporate excess liquid.
- Ensure chicken is cooked to an internal temperature of 165°F for food safety.
- Serving over cooked rice or pasta enhances the dish, but it can also be enjoyed on its own for a low-carb option.
