Instructions
- Prepare the chicken: Place the boneless, skinless chicken breasts at the bottom of a greased crockpot to prevent sticking and ensure even cooking.
- Make the creamy sauce: In a medium bowl, whisk together the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper until the mixture is smooth and creamy.
- Combine chicken and sauce: Pour the creamy mixture over the chicken breasts in the crockpot, making sure each piece is well-coated in the sauce for maximum flavor.
- Cook the chicken: Cover the crockpot and cook on low for 4–5 hours or on high for 2–3 hours, or until the chicken is tender and easily shredded.
- Shred chicken and add broccoli and cheese: Use two forks to shred the cooked chicken directly in the crockpot, then stir in the broccoli and 1 cup of shredded cheddar cheese. Continue cooking for another 20-30 minutes to soften the broccoli and melt the cheese.
- Finish with more cheese: Sprinkle the remaining cheddar cheese on top of the mixture, cover the crockpot, and let it melt completely before serving. Serve warm over cooked rice for a hearty meal.
Notes
- You can use fresh or frozen broccoli depending on what you have on hand. If using frozen, there’s no need to thaw before adding.
