  • 2 cups cheddar cheese (shredded, divided)

Instructions

  1. Prepare the chicken: Place the boneless, skinless chicken breasts at the bottom of a greased crockpot to prevent sticking and ensure even cooking.
  2. Make the creamy sauce: In a medium bowl, whisk together the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper until the mixture is smooth and creamy.
  3. Combine chicken and sauce: Pour the creamy mixture over the chicken breasts in the crockpot, making sure each piece is well-coated in the sauce for maximum flavor.
  4. Cook the chicken: Cover the crockpot and cook on low for 4–5 hours or on high for 2–3 hours, or until the chicken is tender and easily shredded.
  5. Shred chicken and add broccoli and cheese: Use two forks to shred the cooked chicken directly in the crockpot, then stir in the broccoli and 1 cup of shredded cheddar cheese. Continue cooking for another 20-30 minutes to soften the broccoli and melt the cheese.
  6. Finish with more cheese: Sprinkle the remaining cheddar cheese on top of the mixture, cover the crockpot, and let it melt completely before serving. Serve warm over cooked rice for a hearty meal.
