Ingredients
Scale
For the Teriyaki Sauce
- 1/2 cup low-sodium soy sauce
- 1/4 cup water
- 2 tablespoons red wine vinegar
- 2 tablespoons brown sugar
- 2 tablespoons granulated sugar
- 2 teaspoons minced garlic
- 1 teaspoon ground ginger
- 1 tablespoon cornstarch
- 2 tablespoons warm water
For the Bowl
- 1 pound ground turkey
- 1 tablespoon vegetable oil
- 1/2 cup diced onion
- 1 cup broccoli, finely chopped
- 2 large carrots, grated
- 4 cups cooked white or brown rice
- Additional garlic, minced, as desired for flavor
- Optional garnish: sliced green onions
Instructions
- Prepare the teriyaki sauce: In a mixing bowl, whisk together the low-sodium soy sauce, 1/4 cup water, red wine vinegar, brown sugar, granulated sugar, minced garlic, ground ginger, cornstarch, and 2 tablespoons warm water until smooth and well combined.
- Sauté the vegetables: Heat 1 tablespoon of vegetable oil over medium heat in a non-stick skillet. Add the diced onions and minced garlic, cooking until fragrant and translucent, about 2-3 minutes. Then add the chopped broccoli and grated carrots, sautéing until the vegetables become tender but still vibrant, approximately 4-5 minutes.
- Cook the turkey: Add the ground turkey to the skillet with the vegetables. Break it apart with a spatula and cook until completely browned and no longer pink, about 6-8 minutes.
- Add teriyaki sauce and simmer: Pour the prepared teriyaki sauce over the cooked turkey and vegetables. Stir thoroughly to coat everything evenly. Allow the mixture to simmer for about 5 minutes until the sauce thickens, stirring occasionally to prevent sticking.
- Assemble the rice bowl: Spoon the cooked white or brown rice into bowls. Top with the teriyaki turkey and vegetable mixture. Garnish with sliced green onions if desired, and serve immediately while warm.
