  • 3 cups medium shell pasta (approximately 10 oz)
  • 1 tablespoon tomato paste
  • 2 cups beef broth
  • 2 cups water
  • 1 cup shredded cheddar cheese

Instructions

  1. Prepare the Pan: Spray a large pan or pot with olive oil spray and heat over medium-high heat for 3 minutes to warm the cooking surface evenly.
  2. Cook the Beef and Vegetables: Add the ground beef, chopped onion, minced garlic, and diced red bell peppers to the pan. Cook for about 10 minutes, stirring occasionally, until the beef is fully cooked through and no longer pink.
  3. Add Pasta and Seasonings: Stir in the dry pasta, taco seasoning, tomato paste, beef broth, and water. Mix everything thoroughly to combine the flavors.
  4. Boil and Simmer: Cover the pan and bring the mixture to a boil, which should take approximately 5 minutes. Once boiling, remove the lid and reduce heat to medium. Continue cooking uncovered, stirring every few minutes for 10-12 minutes until the pasta is tender and the liquid has reduced to a sauce-like consistency.
