Instructions
- Prepare workspace: Line a large baking sheet with parchment paper or wax paper to prepare for shaping the truffles.
- Process cookies: Place sugar cookies in a food processor bowl. Pulse in 10-second bursts until very fine crumbs form, resembling sand in texture.
- Mix filling: Transfer cookie crumbs to a large mixing bowl. Add the softened cream cheese and mix initially with a spoon. Then use clean hands to thoroughly combine the mixture until it holds together when pressed.
- Form balls: Scoop 1 tablespoon portions of the mixture and roll between your palms to form smooth spheres. Place each ball on the lined baking sheet.
- Initial chill: Freeze the cookie balls on the baking sheet for 15-20 minutes until they are firm to the touch.
- Melt coating: Place melting wafers in a microwave-safe bowl. Heat at 50% power in 30-second intervals, stirring between each until fully melted and smooth.
- Prep dipping tools: Modify a plastic fork by breaking off the middle tines, and have a toothpick ready for transferring the truffles after dipping.
- Dip truffles: Working with 4 to 5 chilled cookie balls at a time, dip each into the melted coating by fully submerging with the fork. Lift and gently tap 3-4 times to remove excess coating, then scrape the bottom of the fork on the bowl edge. Slide the coated truffle off onto the parchment paper using the toothpick. Immediately add sprinkles before the coating sets.
- Set coating: Place the dipped truffles in the refrigerator for 5 minutes between dipping batches to set the coating properly.
- Drizzle decoration: Transfer any remaining melted coating into a zip-top bag, snip off a corner, and drizzle over the set truffles for an elegant finish.
