Description

These Peanut Butter Rice Krispie Treats are a delicious twist on the classic cereal bar, combining rich peanut butter and gooey marshmallows with crispy Rice Krispies, then topped with a smooth chocolate drizzle. Perfect as a sweet snack or dessert, they’re easy to make and loved by kids and adults alike.

Ingredients

Scale

Main Ingredients

  • 1/4 cup unsalted butter
  • 1 10 oz bag mini marshmallows (about 5 cups)
  • 1/2 cup peanut butter
  • 6 cups Rice Krispie cereal

Topping

  • 8 oz chocolate chips (about 1 1/3 cups)
  • 2 teaspoons vegetable oil

Instructions

  1. Prepare the pan: Lightly grease a 9×13 inch pan with butter or non-stick cooking spray to prevent sticking.
  2. Melt the base ingredients: In a large saucepan over low heat, gently melt the butter, mini marshmallows, and peanut butter together while stirring frequently to combine smoothly without burning.
  3. Add the cereal: Once the marshmallow mixture is fully melted, remove the pan from heat and stir in the Rice Krispie cereal until all the cereal is evenly coated with the mixture.
  4. Press the mixture into the pan: Transfer the mixture into the prepared pan. Lightly spray your hands with non-stick cooking spray to prevent sticking and press the mixture firmly and evenly into the pan to set.
  5. Melt the chocolate topping: Place the chocolate chips in a medium heatproof bowl. Microwave on medium power for 45-second intervals, stirring between each burst until the chocolate is almost melted. Stir until smooth.
  6. Add oil and combine: Stir the vegetable oil into the melted chocolate to give it a shiny, smooth consistency perfect for drizzling.
  7. Top the bars: Pour the melted chocolate evenly over the pressed Rice Krispie mixture and spread gently if needed.
  8. Set the bars: Allow the chocolate topping to harden at room temperature for about 2 hours until fully set and firm.
  9. Serve and store: Cut into squares and store the treats in an airtight container kept at room temperature to maintain freshness.

Notes

  • Lightly spraying your hands with cooking spray helps prevent the sticky mixture from adhering to your skin when pressing into the pan.
  • Microwaving chocolate on medium power in intervals helps prevent burning and ensures a smooth melt.
  • The vegetable oil in the chocolate topping adds gloss and helps the chocolate set smoothly.
  • These treats are best eaten within a few days for maximum freshness but can be stored airtight for up to a week.
  • For a nut-free option, omit the peanut butter and increase marshmallows slightly to maintain texture.
