Instructions

  1. Prepare the pan: Lightly grease a 9×13 inch pan with butter or non-stick cooking spray to prevent the mixture from sticking.
  2. Melt marshmallow mixture: In a large saucepan, melt the butter, mini marshmallows, and peanut butter together over low heat, stirring gently until smooth and combined.
  3. Add cereal: Remove the saucepan from heat and stir in the 6 cups of Rice Krispie cereal until evenly coated with the marshmallow mixture.
  4. Press mixture into pan: Using lightly sprayed hands (to prevent sticking), press the mixture firmly and evenly into the prepared pan to create the base layer.
  5. Melt chocolate topping: Place the chocolate chips in a medium heatproof bowl and microwave in 45-second intervals on medium power, stirring between each interval until nearly melted. Stir until smooth and then mix in 2 teaspoons of vegetable oil to create a shiny ganache.
  6. Top and set: Pour the melted chocolate evenly over the pressed cereal bars and let it harden at room temperature for about 2 hours until firm.
  7. Slice and store: Cut into squares and store in an airtight container at room temperature to keep fresh.
