Instructions

  1. Combine Dry Ingredients: In a large bowl, mix the vanilla wafer crumbs and powdered sugar until evenly combined, ensuring uniform texture.
  2. Add Wet Ingredients: Stir in the corn syrup and Baileys Irish Cream thoroughly. The mixture will be crumbly at this stage but should hold together when pressed.
  3. Form Balls: Using about 1 tablespoon of the mixture, shape into balls with your fingertips. If the dough sticks, lightly dust your fingers with powdered sugar to make handling easier. Place the formed balls on a platter and set aside.
  4. Melt Candy Coating: Put the candy melts in a microwave-safe bowl and heat in short bursts of 15 to 45 seconds, stirring well between intervals until the candy is fully melted and smooth.
  5. Dip and Set: Using a fork or toothpick, dip each cookie ball into the melted candy melts, coating it completely. Transfer the coated balls onto parchment paper and let them dry completely at room temperature before serving.
