Instructions
- Preheat Skillet: Preheat a skillet over medium-high heat to prepare for cooking the kielbasa.
- Browns the Kielbasa: Slice the kielbasa sausage and add to the hot skillet. Stir occasionally while frying to ensure even browning. This should take about 6 minutes. Once browned, remove the kielbasa from the pan and set aside, leaving the rendered fat in the pan.
- Prepare Vegetables: While the kielbasa is browning, chop the onion and potatoes into bite-sized pieces.
- Cook the Potatoes: Add the chopped potatoes to the skillet with the kielbasa grease. Sprinkle with paprika, kosher salt, and oregano. Stir to coat the potatoes evenly in the fat. Reduce the heat to medium or medium-low, cover the skillet, and cook the potatoes for about 13 minutes, stirring regularly to prevent sticking and promote even cooking.
- Sauté Onions and Garlic: Add the chopped onions and minced garlic to the skillet with the potatoes. Cover and cook for about 12 minutes, stirring regularly, until the potatoes have softened and the onions are translucent and cooked through.
- Combine and Finish Cooking: Add the browned kielbasa back into the skillet with the potatoes and onions. Mix well and cook for an additional 4 minutes to allow flavors to meld and everything to heat through.
