  • Diet: Low Fat

Description

This Ground Beef Philly Cheesesteak Meal Prep is a hearty and flavorful dish combining lean ground beef with sautéed bell peppers, onions, and mushrooms, topped with melted Colby Jack or provolone cheese. Paired with fluffy basmati rice, it’s perfect for a make-ahead lunch or dinner that stays fresh in the refrigerator for up to four days.

Ingredients

Scale

Meat and Dairy

  • 3 lbs lean ground beef
  • 2 cups shredded Colby Jack or provolone cheese

Vegetables

  • 2 medium green bell peppers, diced
  • 2 small onions, sliced
  • 4 cups sliced mushrooms

Liquids and Condiments

  • 4 tsp Worcestershire sauce
  • ½ cup beef broth

Grains

  • 4 cups cooked basmati rice

Instructions

  1. Cook the rice: If not already prepared, cook the basmati rice according to the package instructions until fluffy. Set aside and keep warm.
  2. Sauté veggies: Heat a large skillet over medium heat and add the sliced onions, diced green bell peppers, and sliced mushrooms. Sauté for 5 to 7 minutes, stirring occasionally, until the vegetables are soft and slightly caramelized. Remove from the skillet and set aside.
  3. Brown the beef: Using the same skillet, add the lean ground beef and cook over medium heat until browned thoroughly, breaking it apart with a spatula. Once cooked, drain any excess fat to reduce grease.
  4. Add flavor: Stir the Worcestershire sauce and beef broth into the browned beef, then reduce the heat and simmer the mixture for 2 to 3 minutes. Return the sautéed vegetables to the skillet and stir well to combine all the flavors.
  5. Melt the cheese: Evenly sprinkle the shredded Colby Jack or provolone cheese over the beef and vegetable mixture. Cover the skillet and cook on low heat until the cheese melts smoothly, about 3 to 5 minutes.
  6. Assemble meal prep: Divide the cooked basmati rice and the cheesesteak mixture evenly into 8 meal prep containers. Allow to cool slightly before sealing. Store in the refrigerator for up to 4 days and reheat before serving.

Notes

  • Use lean ground beef to keep the dish lower in fat.
  • Substitute provolone cheese for Colby Jack if preferred for a more traditional Philly cheesesteak flavor.
  • The meal prep keeps well in the refrigerator for up to 4 days, making it ideal for batch cooking.
  • For a low-carb version, substitute cooked cauliflower rice instead of basmati rice.
  • Ensure to drain excess fat from the beef to prevent the dish from being greasy.
