Ingredients
Scale
Beef Mixture
- 1 pound lean ground beef
- 1/2 teaspoon garlic powder
- Kosher salt and freshly ground black pepper to taste
- 1/3 cup thinly sliced green onions
- 2 tablespoons low sodium soy sauce
- 1 teaspoon sriracha (optional)
Vegetables and Sauce
- 1 tablespoon avocado oil
- 1 pound shredded Brussels sprouts
- Kosher salt and freshly ground black pepper to taste
- 1/2 cup sweet chili sauce
- 1/2 of a lime, juiced
- Sesame seeds for garnish (optional)
Instructions
- Cook the ground beef: Add the ground beef to a large skillet and crumble it while cooking. Mix in the green onions and season with salt, pepper, garlic powder, sriracha (if using), and soy sauce. Cook until the beef is browned and cooked through, then remove it from the skillet and set aside on a plate.
- Sauté the Brussels sprouts: Add the avocado oil to the same skillet and toss in the shredded Brussels sprouts. Season with salt and pepper, then sauté over medium heat until the Brussels sprouts are soft and caramelized, stirring occasionally to prevent sticking.
- Combine beef and sauce: Return the cooked ground beef to the skillet with the Brussels sprouts. Pour in the sweet chili sauce and lime juice, stirring well to coat all the ingredients evenly. Heat through for a couple of minutes to blend the flavors.
- Serve: Garnish with sesame seeds if desired, and serve the mixture over cooked rice or your preferred side dish. Enjoy warm.
Notes
- You can adjust the spiciness by varying the amount of sriracha or omitting it completely for a milder dish.
- Shredding the Brussels sprouts thinly ensures they cook quickly and caramelize nicely.
- This dish pairs well with steamed rice, quinoa, or cauliflower rice for a low-carb option.
- Use avocado oil or any neutral cooking oil with a high smoke point for best results.
- Leftovers keep well refrigerated for up to 3 days and reheat nicely in a skillet or microwave.
