Instructions

  1. Make the chocolate pudding: Whisk together milk, sugar, cocoa powder, cornstarch, and salt in a saucepan over medium heat. Bring the mixture to a boil while stirring constantly. In a separate bowl, whisk the eggs. Temper the eggs by slowly adding some of the hot milk mixture to them while whisking to prevent curdling. Return the egg mixture to the saucepan and cook, stirring continuously until the pudding thickens to a creamy consistency. Remove from heat and stir in the vanilla extract.
  2. Prepare the crust: Combine the crushed graham crackers with the melted butter until the mixture is evenly moistened. Press this mixture firmly into the bottom of individual serving cups or jars to form the crust.
  3. Assemble and chill: Pour the warm chocolate pudding over the graham cracker crust in the cups. Sprinkle additional crushed graham crackers and a layer of marshmallows evenly on top.
