Instructions

  1. Cook Ground Beef: In a skillet over medium heat, cook the ground beef, breaking it up into small pieces with a wooden spoon. Once browned, drain any excess grease. Add taco seasoning and water, stirring well to combine. Let the mixture simmer until thickened.
  2. Crisp Tortillas: Heat oil in a small skillet over medium-high heat. Once hot, cook each corn tortilla one at a time until golden and slightly crisp on both sides, flipping halfway through. Remove tortillas to a paper towel-lined plate to drain.
  3. Assemble Mexican Pizzas: Spread a thin layer of enchilada sauce on one crisp tortilla. Add a layer of refried beans, followed by a spoonful of the seasoned taco meat. Sprinkle shredded cheddar cheese over the meat, then place a second tortilla on top. Spread another spoonful of enchilada sauce and sprinkle with more cheese on the top tortilla.
  4. Bake: Preheat the oven to 400°F (204°C). Place the assembled tortillas on a baking sheet and bake for about 10 minutes or until the cheese is melted and bubbly.
