  • Yield: 6 servings 1x

Description

This Crock Pot Creamy Chicken Parmesan Soup is a comforting and delicious slow-cooked meal combining tender chicken breasts, savory crushed tomatoes, aromatic garlic and onion, creamy heavy cream, and rich Parmesan cheese. Perfect for a cozy dinner, this soup delivers the classic flavors of chicken Parmesan in a warm, hearty bowl with minimal prep and easy slow cooking.

Ingredients

Scale

Chicken and Broth

  • 23 boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth

Vegetables and Seasonings

  • 1 small yellow onion, chopped
  • 34 garlic cloves, minced
  • Italian seasoning, to taste (approximately 1-2 teaspoons)

Tomato and Dairy

  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese

Instructions

  1. Prepare the Chicken: Place raw chicken breasts at the bottom of the crock pot to serve as the base of the soup.
  2. Add Vegetables and Seasonings: Add chopped onion, minced garlic, a sprinkle of Italian seasoning, and the can of crushed tomatoes over the chicken in the crock pot.
  3. Pour in Broth and Cover: Pour the low-sodium chicken broth into the crock pot and cover it with the lid to begin cooking.
  4. Slow Cook the Soup: Cook on low heat for 6–7 hours or high heat for 3–4 hours until the chicken is thoroughly cooked and tender.
  5. Shred the Chicken: Remove the chicken breasts and shred them using two forks, then return the shredded chicken back into the crock pot.
  6. Add Cream and Cheese: Stir in the heavy cream and gradually add the grated Parmesan cheese, stirring until the cheese is fully melted and incorporated into the soup.
  7. Cook Uncovered: Cook the soup uncovered on low for an additional 20–30 minutes to thicken and blend the flavors before serving.

Notes

  • Use low-sodium chicken broth to better control the salt content of the soup.
  • For a thicker soup, reduce the liquid by cooking uncovered for a longer time after adding the cream and cheese.
  • Adjust Italian seasoning according to your preference for herb flavor intensity.
  • Leftovers can be refrigerated for up to 3 days and reheated on the stovetop or microwave.
  • For a lighter version, substitute heavy cream with half-and-half or whole milk, though the soup will be less creamy.
  • Prep Time: 10 minutes
  • Cook Time: 6-7 hours on low or 3-4 hours on high plus 20-30 minutes uncovered
