Ingredients
Scale
Chicken and Broth
- 2–3 boneless, skinless chicken breasts
- 4 cups low-sodium chicken broth
Vegetables and Seasonings
- 1 small yellow onion, chopped
- 3–4 garlic cloves, minced
- Italian seasoning, to taste (approximately 1-2 teaspoons)
Tomato and Dairy
- 1 (14.5 oz) can crushed tomatoes
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
Instructions
- Prepare the Chicken: Place raw chicken breasts at the bottom of the crock pot to serve as the base of the soup.
- Add Vegetables and Seasonings: Add chopped onion, minced garlic, a sprinkle of Italian seasoning, and the can of crushed tomatoes over the chicken in the crock pot.
- Pour in Broth and Cover: Pour the low-sodium chicken broth into the crock pot and cover it with the lid to begin cooking.
- Slow Cook the Soup: Cook on low heat for 6–7 hours or high heat for 3–4 hours until the chicken is thoroughly cooked and tender.
- Shred the Chicken: Remove the chicken breasts and shred them using two forks, then return the shredded chicken back into the crock pot.
- Add Cream and Cheese: Stir in the heavy cream and gradually add the grated Parmesan cheese, stirring until the cheese is fully melted and incorporated into the soup.
- Cook Uncovered: Cook the soup uncovered on low for an additional 20–30 minutes to thicken and blend the flavors before serving.
Notes
- Use low-sodium chicken broth to better control the salt content of the soup.
- For a thicker soup, reduce the liquid by cooking uncovered for a longer time after adding the cream and cheese.
- Adjust Italian seasoning according to your preference for herb flavor intensity.
- Leftovers can be refrigerated for up to 3 days and reheated on the stovetop or microwave.
- For a lighter version, substitute heavy cream with half-and-half or whole milk, though the soup will be less creamy.
