Ingredients
Scale
For the Chicken
- 2 large boneless, skinless chicken breasts
- 2 teaspoons Italian seasoning
- Salt and pepper, to taste
- 2 tablespoons butter (melted)
- 1–2 tablespoons olive oil
For the Sauce
- 10.5 oz. cream of chicken soup (one standard can)
- 1 ½ cups milk
- 1 cup sour cream (at room temperature)
- ½ teaspoon onion powder
- 1 oz. packet Ranch seasoning mix
Instructions
- Slice and Tenderize the Chicken: Start by slicing each chicken breast into 2-3 thinner pieces, aiming for about ½ inch thickness. If needed, use a meat tenderizer to even out the slices so they cook evenly and become tender.
- Season and Butter the Chicken: Pat the chicken slices dry with paper towels. Sprinkle both sides generously with Italian seasoning, salt, and pepper. Using a brush, coat one side of each piece with melted butter, making sure the butter has cooled slightly so it doesn’t cook the chicken prematurely.
- Sear the Chicken: Heat 1 to 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, sear the chicken slices in batches to avoid overcrowding, cooking each side for 4-5 minutes until a golden brown crust forms. Remove the chicken from the skillet and set aside.
- Prepare the Sauce: In the same skillet, lower the heat to medium and add the cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning mix. Stir thoroughly to combine the ingredients, scraping any browned bits from the chicken to add flavor. Let the sauce bubble gently and reduce slightly for about 5 minutes.
- Simmer the Chicken in Sauce: Return the seared chicken slices to the skillet. Spoon the sauce over the chicken pieces, then partially cover the skillet with a lid. Allow the chicken to simmer and absorb the sauce flavors for approximately 10 minutes, ensuring it is heated through and tender.
- Serve: Serve the creamy ranch chicken hot, optionally spooning extra sauce over baked potatoes or your preferred side to enhance the meal experience.
Notes
- For the best flavor, use room temperature sour cream to prevent curdling when mixed with hot sauce.
- Do not overcrowd the pan when searing chicken to ensure a nice crust forms.
- Partially covering the skillet during simmering helps the sauce thicken without trapping too much steam.
- Leftover creamy ranch chicken stores well in the fridge for up to 3 days and can be reheated gently on the stovetop.
- For a lower-fat version, substitute sour cream with Greek yogurt and use low-fat cream of chicken soup.
