  • Author: Sarah
  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Description

This Creamy Chicken Pot Pie Orzo recipe is a comforting one-pot meal featuring tender chicken, hearty vegetables, and creamy sauce combined with perfectly cooked orzo pasta. It offers the classic flavors of a chicken pot pie in a quicker, easier stovetop version, ideal for a cozy family dinner.

Ingredients

Scale

Protein

  • 2 boneless, skinless chicken breasts, cooked and diced

Vegetables

  • 2 celery stalks, finely diced
  • 2 carrots, finely diced
  • ½ yellow onion, finely diced

Seasonings

  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 1 teaspoon chicken bouillon powder

Pasta

  • 8 ounces orzo pasta

Dairy & Fats

  • 5 tablespoons butter
  • 2 tablespoons olive oil
  • ½ cup heavy whipping cream

Other

  • 2 cups chicken broth
  • ⅓ cup all-purpose flour

Instructions

  1. Cook the Orzo: Prepare the orzo pasta according to the package instructions. Once cooked, drain well and set it aside to use later.
  2. Season & Cook the Chicken: Sprinkle the chicken breasts evenly with onion powder, garlic powder, paprika, salt, and black pepper. Cook the chicken thoroughly until it reaches an internal temperature of 165°F (74°C). Once cooked, dice the chicken into bite-sized pieces.
  3. Sauté the Vegetables: In a skillet, melt butter with olive oil over medium heat. Add the diced onion, carrots, and celery and cook them until they become slightly softened, which should take about 5 minutes.
  4. Make the Roux: Sprinkle the flour over the sautéed vegetables and whisk continuously to form a smooth paste. Cook this mixture for 2 to 3 minutes to eliminate the raw flour taste.
  5. Make It Creamy: Slowly whisk in the chicken broth and heavy whipping cream into the roux until the sauce is smooth and begins to thicken.
  6. Combine Everything: Add the diced chicken, chicken bouillon powder, and cooked orzo into the creamy sauce. Simmer everything together until the mixture reaches your desired consistency, allowing flavors to meld.
  7. Serve: Spoon the creamy chicken pot pie orzo into bowls and serve hot for a delicious, comforting meal.

Notes

  • Ensure the chicken is fully cooked to an internal temperature of 165°F for food safety.
  • You can substitute heavy whipping cream with half-and-half for a lighter option, but the sauce will be less rich.
  • For extra flavor, consider adding fresh thyme or parsley when sautéing the vegetables.
  • If you prefer a thicker sauce, cook the mixture a little longer to reduce it further.
  • This recipe can be easily doubled for larger families or meal prep.
