Ingredients
Scale
Pasta
- 8 oz elbow macaroni
Chicken & Cheese
- 2 cups shredded cooked chicken (Can substitute with rotisserie chicken)
- 2 cups sharp cheddar cheese, shredded, divided
Sauce
- 1 cup cream cheese, cubed
- 1 cup chicken broth
- 1/2 cup ranch dressing
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
Toppings & Garnishes
- 1/2 cup crispy bacon, crumbled
- 1/4 cup chopped green onions (for garnish)
Instructions
- Cook the Pasta: Begin by cooking the elbow macaroni according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
- Prepare the Sauce: In a medium saucepan over medium heat, combine the chicken broth, cubed cream cheese, ranch dressing, garlic powder, onion powder, salt, black pepper, and paprika. Stir continuously until the cream cheese has fully melted and the mixture becomes smooth and creamy.
- Mix Pasta and Chicken: In a large mixing bowl, combine the cooked macaroni, shredded cooked chicken, half of the shredded cheddar cheese, and the creamy sauce mixture. Stir thoroughly to ensure all ingredients are well coated and evenly distributed.
- Assemble the Dish: Transfer the mac and cheese mixture into a greased baking dish, spreading it out evenly. Sprinkle the remaining shredded cheddar cheese on top followed by the crumbled crispy bacon.
- Bake: Preheat the oven to 350°F (175°C). Place the baking dish in the oven and bake for 15-20 minutes, or until the cheese on top is bubbly and golden brown.
- Finish and Garnish: Remove the dish from the oven and allow it to cool slightly for a few minutes. Garnish with chopped green onions before serving to add freshness and color.
Notes
- You can use rotisserie chicken to save time without sacrificing flavor.
- For extra smoky flavor, add smoked paprika instead of regular paprika.
- Make sure not to overcook the pasta to avoid mushy texture after baking.
- Feel free to add extra veggies like peas or diced bell peppers for added nutrition.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
