Description

Cinnamon Roll Muffins are irresistibly soft and gooey bites featuring a tender muffin base swirled with a cinnamon-sugar filling and topped with a sweet vanilla glaze. Perfect for breakfast, dessert, or a cozy snack, these muffins combine the classic flavors of cinnamon rolls in an easy-to-make muffin form.

Ingredients

Scale

Muffin Batter

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¾ cup milk
  • ⅓ cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract

Cinnamon Swirl Filling

  • ⅓ cup brown sugar, packed
  • 1 tbsp ground cinnamon
  • 2 tbsp unsalted butter, melted

Vanilla Glaze

  • ½ cup powdered sugar
  • 1 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) and prepare a 12-cup muffin tin by lining it with paper liners or lightly greasing it to prevent sticking.
  2. Combine dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt ensuring an even distribution of leavening agents.
  3. Mix wet ingredients: In a separate bowl, whisk together the milk, melted butter, egg, and vanilla extract until smooth and fully combined.
  4. Make the batter: Pour the wet ingredients into the dry mixture and stir gently just until no streaks of flour remain; avoid overmixing to keep muffins tender.
  5. Prepare cinnamon filling: In a small bowl, combine brown sugar, ground cinnamon, and melted butter, mixing until evenly blended to create the cinnamon swirl filling.
  6. Fill muffin cups: Spoon approximately 1 tablespoon of muffin batter into each muffin cup. Add a small spoonful of the cinnamon filling on top of the batter layer.
  7. Top and swirl: Add more muffin batter to fill each cup about three-quarters full. Use a toothpick or the tip of a knife to gently swirl the cinnamon filling into the batter to create a marbled effect.
  8. Bake the muffins: Bake in the preheated oven for 15 to 18 minutes or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
  9. Prepare the glaze: While the muffins cool slightly, whisk together powdered sugar, milk, and vanilla extract in a small bowl until smooth and pourable.
  10. Glaze and serve: Drizzle the vanilla glaze over the warm muffins. Serve immediately to enjoy their gooey, soft texture and irresistible flavor.

Notes

  • Do not overmix your batter to maintain tender and fluffy muffins.
  • Add chopped pecans or walnuts into the batter or as a topping for extra crunch.
  • Store leftover muffins in an airtight container at room temperature for up to 3 days.
  • Warm muffins in the microwave for about 10 seconds before serving to enjoy a fresh-baked texture.
