Ingredients
Scale
Pizza Dough
- 2 cups all-purpose flour
- 4 tsp yeast
- 1 tsp kosher salt
- 1/2 tsp sugar
- 1 cup warm water
Toppings
- 1 cup shredded cooked chicken (rotisserie chicken preferred)
- 1/2 cup salsa (jarred preferred)
- 1/2 onion, thinly sliced
- 1 bell pepper, gutted and sliced into spears
- 1 TBSP extra virgin olive oil
- 1 TBSP fajita seasoning (homemade preferred)
- 2 cups shredded Mexican blend or mozzarella cheese
- Fresh parsley or cilantro, for garnish
Instructions
- Prepare the dough: In a large mixing bowl, whisk together the flour, yeast, salt, and sugar. Attach the dough hook to a mixer set on low, and slowly pour in the warm water, mixing until the dough forms a ball, about one minute. Alternatively, knead by hand on a floured surface until smooth.
- Rise the dough: Place the dough ball in a lightly oiled bowl, cover tightly with plastic wrap, and let it sit at room temperature for one hour to allow it to rise.
- Preheat oven: Heat your oven to 450ºF (232ºC) to prepare for baking.
- Season and toss toppings: In a large bowl, combine the shredded chicken, sliced onion, sliced bell pepper. Drizzle with olive oil and sprinkle the fajita seasoning, then toss thoroughly to coat.
- Shape the pizza base: Lightly oil your pizza pan. Transfer the risen dough onto the pan and gently press and stretch it out to cover the pan edges, forming the pizza crust.
- Assemble the pizza: Spread the salsa evenly over the dough center, leaving about 1/2 to 1 inch for the crust edge. Sprinkle the shredded cheese evenly on top of the salsa. Distribute the seasoned chicken and vegetable mixture evenly across the pizza.
- Bake: Place the pizza in the preheated oven and bake for 12-15 minutes, or until the crust turns golden brown and the cheese is melted and bubbly.
- Serve: Remove the pizza from the oven and let it rest for 5 minutes. Garnish with fresh parsley or cilantro before slicing and serving.
Notes
- Using rotisserie chicken saves time and adds flavor.
- Jarred salsa is preferred over homemade here as it holds better on the pizza.
- Mandolin slicing for vegetables ensures even cooking and texture.
- You can make your own fajita seasoning for a fresher taste or use store-bought.
- Letting the dough rest after shaping helps achieve a softer crust.
