Ingredients

Scale

Main Ingredients

  • 2 tablespoons Olive Oil (Can substitute with butter)
  • 1 pound Ground Beef (Ground turkey or chicken can be used)
  • 1 medium Yellow Onion (Diced, shallots can be used)
  • 2 cloves Garlic (Minced, fresh preferred)
  • 1/4 cup All-Purpose Flour (Cornstarch is a gluten-free alternative)
  • 4 cups Chicken Broth (Vegetable broth is a vegetarian swap)
  • 1 cup Heavy Cream (Half and half or whole milk can be used)
  • Salt (To taste)
  • Pepper (To taste)
  • Onion Powder (To taste)
  • 1 teaspoon Italian Seasoning (Adjust to taste)
  • 1 teaspoon Paprika (Adjust to taste)
  • 1 cup Matchstick Carrots (Fresh or frozen)
  • 1 1/2 cups Uncooked Macaroni Noodles (Any small pasta shape can be used)
  • 1 cup Shredded Cheddar Cheese (Consider mixing different cheese varieties)
  • 1/2 cup Shredded Parmesan Cheese (Pecorino Romano is a flavorful substitute)

Instructions

  1. Heat oil: Warm the olive oil in a large pot over medium-high heat to prepare for cooking the base of the soup.
  2. Brown ground beef and onion: Add the ground beef and diced onion into the pot and cook until the beef is browned and the onion is translucent, about 5-7 minutes, breaking up the beef as it cooks.
  3. Sauté garlic: Stir in minced garlic and sauté for about 1 minute until fragrant, making sure not to burn it.
  4. Add flour: Sprinkle the flour over the beef mixture and stir constantly for 2-3 minutes to cook off the raw flour taste and help thicken the soup later.
  5. Pour in broth and simmer: Gradually add the chicken broth while stirring continuously to combine. Bring the mixture to a simmer and let it cook for 5 minutes to thicken slightly.
  6. Add cream and seasonings: Stir in the heavy cream, salt, pepper, onion powder, Italian seasoning, and paprika. Mix well to incorporate all flavors.
  7. Add carrots and pasta: Add the matchstick carrots and uncooked macaroni noodles to the pot. Bring the mixture to a boil for 1 minute.
  8. Simmer soup: Reduce heat to low and let the soup simmer for 20 minutes, stirring occasionally, until the pasta is cooked and the carrots are tender.
  9. Stir in cheeses: Add shredded cheddar and parmesan cheese to the soup, stirring until the cheeses have fully melted and the soup is creamy.
  10. Serve: Ladle the soup into bowls and enjoy warm as a hearty, comforting meal.

Notes

  • You can substitute ground turkey or chicken for a leaner protein option.
  • Use vegetable broth to make this a vegetarian dish, but omit the ground beef or replace with plant-based meat alternatives.
  • For a gluten-free version, replace all-purpose flour with cornstarch and use gluten-free pasta.
  • Adjust seasonings like paprika and Italian seasoning to suit your taste preferences.
  • Adding different cheese varieties, such as pepper jack or mozzarella, can add interesting flavor twists.
  • If you prefer a thinner soup, add more broth or cream to adjust the consistency.
