Instructions

  1. Preheat Oven: Heat the oven to 400°F (200°C). Line a pizza pan or baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Make Cheese Crust: Spread 2 cups of shredded mozzarella and 1 cup of cheddar cheese evenly on the prepared pan, forming a large circle about 10–12 inches in diameter. This will serve as the pizza crust made entirely of cheese.
  3. Bake First Layer: Bake the cheese crust for 8–10 minutes until the cheese is melted, bubbly, and lightly golden. This sets the base and creates a sturdy crust. Remove from the oven once done.
  4. Add Toppings: Carefully crack the 4 eggs evenly across the cheese base, spacing them out to allow room for cooking. Sprinkle the cooked and crumbled breakfast sausage, diced red onion (if using), and the remaining shredded mozzarella and cheddar cheese on top. Season with salt, black pepper, and red pepper flakes if you want a bit of heat.
