- Prepare baking sheet: Line a baking sheet with parchment paper and set aside. This will be used later to spread the coated cereal for cooling.
- Add cereal to bowl: Pour the entire box of Crispix cereal into a large mixing bowl to hold the cereal when coating it with caramel.
- Melt butter and create caramel: In a large saucepan over medium heat, melt 1 cup of butter. Stir constantly to prevent burning.
- Add brown sugar: Incorporate 2 cups of brown sugar into the melted butter and continue stirring until the mixture reaches a boil. Keep stirring to ensure it doesn’t stick or burn.
- Mix in corn syrup and vanilla: Once boiling, add 1/2 cup corn syrup and 1/2 teaspoon vanilla extract. Bring the mixture back to a boil while stirring consistently to blend flavors.
- Add baking soda for frothiness: Stir in 1/2 teaspoon baking soda. Continue stirring until the caramel becomes foamy and roughly doubles in size, turning into a light tan color. This aerates the caramel and improves texture.
- Coat the cereal: Pour the hot caramel sauce over the Crispix cereal in the bowl. Stir carefully but thoroughly until every piece is evenly coated.
- Spread and cool: Transfer the coated cereal onto the prepared parchment-lined baking sheet. Spread it out evenly and allow it to cool completely — approximately one hour — which helps prevent stickiness and allows the caramel to set.
