  • Yield: 8 servings 1x

Description

This Blueberry Cinnamon Roll Casserole combines the comforting flavors of classic cinnamon rolls with fresh blueberries in a simple bake. Perfect for breakfast or brunch, it offers a delightful mix of sweet, fruity, and warm cinnamon notes, finished with a luscious icing drizzle for extra indulgence.

Ingredients

Scale

Casserole Ingredients

  • 2 cans (8-count) cinnamon rolls, cut into quarters (icing reserved)
  • 1 cup fresh or frozen blueberries
  • 4 large eggs
  • 1/2 cup (120ml) milk
  • 1/4 cup (50g) granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

Optional Ingredients

  • 1 tsp lemon zest
  • 2 oz cream cheese, cut into cubes

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly to prevent sticking.
  2. Arrange Cinnamon Rolls and Blueberries: Cut the cinnamon rolls into quarters and spread them evenly throughout the greased baking dish. Sprinkle the blueberries evenly over the top of the cinnamon roll pieces.
  3. Mix Wet Ingredients: In a medium bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, and cinnamon until the mixture is smooth and well combined.
  4. Combine and Bake: Pour the egg mixture evenly over the cinnamon rolls and blueberries in the baking dish. Place the dish in the oven and bake for 35 to 40 minutes, or until the casserole is golden brown and the custard is fully set.
  5. Finish with Icing: While the casserole is baking, slightly warm the reserved icing to make it easier to drizzle. Once baked, remove the casserole from the oven and drizzle the warm icing generously on top. Optionally, sprinkle with powdered sugar or drizzle with maple syrup for added sweetness.

Notes

  • Use fresh or frozen blueberries according to availability; no need to thaw if using frozen.
  • Optional lemon zest adds a bright tang that complements the blueberries nicely.
  • Adding cream cheese cubes before baking will create creamy pockets throughout the casserole.
  • Let the casserole cool slightly before serving to allow it to set fully.
  • Leftovers can be refrigerated and gently reheated in the microwave or oven.
