Batter

  • 1/2 cup butter (1 stick), softened
  • 2/3 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup milk

Glaze

  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease an 8.5 x 4.5 x 2.5-inch loaf pan with non-stick cooking spray to prevent sticking.
  2. Make Cinnamon Brown Sugar Mixture: In a small bowl, whisk together 1/3 cup brown sugar and 1 teaspoon ground cinnamon; set aside to use later as a topping.
  3. Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to cream the softened butter and 2/3 cup granulated sugar together until the mixture becomes light and fluffy, about 2-3 minutes.
  4. Add Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract. Mix just until combined, avoiding overbeating.
  5. Combine Dry Ingredients: In a separate small bowl, whisk together the all-purpose flour and baking powder until well incorporated.
  6. Mix Batter: Gradually add the flour mixture to the wet ingredients and stir until just combined. Then add the milk and mix until the batter is smooth and uniform.
  7. Layer Batter and Apples: Pour half of the batter into the prepared loaf pan and spread evenly. In a small bowl, toss the chopped apples with 1 teaspoon cinnamon and 1 tablespoon granulated sugar to coat. Spread half of the apple mixture over the batter in the pan. Pour the remaining batter over the apples and spread evenly. Top with the remaining apples and press them down gently to embed in the batter.
  8. Add Cinnamon Sugar Topping: Evenly sprinkle the reserved cinnamon brown sugar mixture over the top of the bread batter and apples.
